Chocolate Brownie Protein Muffins

Ingredients

● 5 ounces 90% chocolate or any dark chocolate

● 2 cups swerve granulated sweetener

● 1.5 tsp baking powder

● 1.5 tsp baking soda

● 1 tsp salt

● 3 eggs

● 16 ounces Greek yogurt 0 % plain

● 1⁄3 cup olive oil

● 2 teaspoons vanilla extract

● 1⁄2 cup boiling water

● 1⁄2 cup cocoa powder

● 1 and 3⁄4 cup protein powder I used Vega Vegan protein powder sport chocolate

● You can use any rice and whey mixed protein blend for texture

Preparation

Preparation:

1. Preheat the oven at 350 degrees F. Mix all the dry ingredients in one bowl.

2. In a separate bowl Mix all the liquid ingredients together except the boiling water.

3. Then add the dry ingredients with the wet ingredients.

4. Add the boiling water to the mixture

5. Spray muffin cups. I used a stoneware muffin tin with paper liners.

6. Cook for 25 min. Or until you feel it is done.


Tips:

I love this over Greek yogurt and berries.

The additional muffins freeze well.
